Chicken Curry Soup

2 Tbsp Olive Oil
1 Medium Onion - diced
1 lb Carrots - diced
3 Celery Ribs - diced
4 - 5 Cloves Garlic - minced
1/3 C Flour
6 C Chicken Stock - I use unsalted
4 Yukon Gold Potatoes - cubed in bite sized pieces
1 Tbsp Curry Powder
2 tsp Garam Masala
1 C Frozen Peas
1 15 oz Can Coconut Milk
1 1/2 - 2 lbs Boneless Chicken Breast
Salt & Pepper to taste

In a dutch oven or large stock pot drizzle oil, add onions stirring for 1 - 2 minutes, add carrots &
celery, cooking for 3 - 4 minutes. Add garlic and season with salt & pepper if needed.
Add flour, cooking for 1 - 2 minutes. Add in the chicken stock, curry powder, garam masala, potatoes
and chicken. Cover and simmer 45 minutes. Remove chicken from pot and shred with 2 forks.
Return shredded chicken to pot. Cook until potatoes are fork tender. Stir in frozen peas and
coconut milk.
*Optional: garnish with cilantro

Serve with ritz crackers

Slow Cooker Buffalo Chicken

2 lbs Boneless Chicken Breasts
1 1/2 C Franks Red Hot
1 pkg Ranch Seasoning
4 Tbsp Butter

In a mediums sized bowl ass Franks Red Hot and ranch seasoning, mix well.

Spray bottom of slow cooker, place chicken in and top with butter. Pour over Red
Hot mixture.

Place lid on and cook on low for 4 hours. Shred with 2 forks.

Can be used for sandwiches, sliders, nachos, quesadilla's, etc.

Buffalo Chicken Quesadillas

Shredded Buffalo Chicken
6 12" Tortilla Shells
1 1/2 C Monterey Jack Cheese - shredded
Blue Cheese or Ranch Dressing for serving

Lightly spray a 12" skillet. Place 1 shell onto the skillet and cover with shredded monterey
jack cheese. Place buffalo chicken on shell and sprinkle more cheese. Place another tortilla
shell on top and cook until golden brown, flip and again cook until golden

Serve with Blue Cheese or Ranch Dressing

Pumpkin Spice Crisp


1 15 oz Can of Pumpkin Puree
1 C Sugar
3 Eggs
1 1/2 C Pumpkin Pie Spice
2 tsp Vanilla
1 tsp Salt
2/3 C Heavy Cream

*Vanilla Ice Cream


1/2 C Butter - softened
1 C Flour
1/2 C Brown Sugar
1/2 tsp Salt
1 tsp Pumpkin Pie Spice
3/4 C Pecans - chopped
1/3 C Oats

In a medium sized bowl combine the butter, flour, brown sugar, salt, pumpkin pie
spice, pecans & oats. Mix together with hands and set aside.

In a large bowl whisk the eggs, pumpkin, sugar, vanilla, pumpkin pie spice, salt
& heavy cream until well combined. Pour into an 8 x 11 baking dish. Crumble the topping
over the pumpkin mixture.

Bake @ 375 F for 45 minutes.

Serve warm with vanilla ice cream.

Banana Bread Pudding

6 C Day Old French or Italian Bread - cubed
1/4 C Butter - melted
4 Eggs
1 1/2 C Milk
1 C Heavy Cream
1/2 C Sugar
1 tsp Cinnamon
1/2 tsp Nutmeg
1 tsp Salt
1 tsp Vanilla
1 C Sliced and/or mashed bananas
1/2 C Chocolate Chips

Place cubed bread in a large bowl, pour melted butter on top and stir coating the bread. Set aside.

In a medium sized bowl mix eggs, milk, heavy cream, sugar, cinnamon, nutmeg, salt & vanilla until
well blended.

Spray or lightly grease a 9 x 13 baking dish. Place bread in dish and pour over egg mixture, patting down bread
allow to sit for 20 minutes or so until the bread soaks up the liquid.

Bake @ 350 for 50 - 60 minutes. Serve with maple syrup
